ROCKET AND AVOCADO SALAD

 2 slices maltese bread cut into cubes
 5 tbsps olive oil
 4 tbsps grated parmesan cheese
 few lettuce leaves
 150 g rocket
 2 avocados, thickly sliced
 2 -3 tbsps pumpkin seeds, toasted
 parmesan shavings to garnish
FOR THE LEMON DRESSING
 2 tsps dijon mustard
 2 tsps honey
 juice of ½ lemon
 5 tbsps olive oil
 basil or mint leaves

Heat the oven to 180⁰C – Gas 4. Mix the bread cubes in a bowl with the oil, grated parmesan and black pepper,. Put on a baking sheet and bake for 15 minutes until golden. Mix the dressing ingredients and season. Mix together the remaining salad ingredients with the croutons, then sprinkle over the dressing and parmesan shavings.
