CLOSED PIZZA CARBONARA

 500 g pizza dough
 700 g zucchini
 200 g bacon, cubed
 2 eggs, beaten
 60 g grated parmesian cheese
 300 g mozzarella, cubed
 Olive oil
 Salt and pepper to taste

Trim the zucchini, slice and fry in oil for approx 5 minutes. Season with salt and pepper, add the beaten egg, mix well and switch off the heat. Fry the bacon in a small pan.

Divide the dough into 4 equal balls and roll out into 4 discs of approx20cm diameter. Spread the zucchini, mozzarella and bacon, and two thirds of the cheese on half of the discs, then fold over the pastry over the filling, and seal the edges. Brush with oil and sprinkle the rest of the cheese on top. Place on a baking tray lined with oven paper and bake in a hot oven for about 25 minutes.
