COURGETTE AND CHILI SALAD
3 tbsp olive oil
3 medium courgettes cut into chunky batons
3 cloves garlic, finely chopped
1 red chilli, deseeded and finely chopped
Small handful parsley chopped
Small handful mint leaves

Heat the oil in a frying pan, add courgettes, garlic and chili, season well, then cook on a low heat for about 6 minutes, until courgettes are tender, stir through parsley and mint and serve warm
