AVOCADO AND TOMATO SALAD

 Heart of cos lettuce shredded by hand
 1cup grated carrots
 250 g cherry tomatoes, halved
 1 small onion, sliced thinly
 1 medium avocado, chopped coarsely
 ¼ cup parsley, coarsely chopped
 1 tbsp finely shredded fresh basil
 ¼ cup extra virgin olive oil
 2 tbsps balsamic vinegar
 1 teaspoon brown sugar
 1 clove garlic, crushed

Combine the cos lettuce, carrot, tomatoes, onion, avocado and herbs in a large serving bowl. Combine the remaining ingredients in a screw-top jar and shake well. Pour the dressing over the salad. Toss gently to combine.
