STRAWBERRY AND WHITE CHOCOLATE TARTS
100 g white chocolate
6 sweet pastry cases
100 g mascarpone
200 ml Crème Fraiche
½ tsp vanilla powder
400 g strawberries halved
2-3 tbsp strawberry jam

Melt the chocolate in a microwave in 30second bursts, stir and allow to cool to room temperature; once cooled, brush a layer of white chocolate on the inside of each pastry case then leave to set

Beat together the mascarpone, crème fraiche and vanilla until well blended, then beat in the remaining melted white chocolate; divide the mixture between the pastry cases

Arrange the strawberries cut-side down on the filling; gently heat the jam with 1 tbsp water then brush over the strawberries to coat evenly; leave to set, then serve; best eaten on the day of making
