Yields4 Servings
 3 medium potatoes cut into small cubes
 3 carrots cut into small cubes
 1 cup frozen peas
 Chopped parsley
 Dash of paprika (optional)
 4 – 5 tbsps mayonnaise
 Salt and pepper to taste

Boil the vegetables seperately and cool in a bowl. Add the mayonnaise, season with salt and pepper and add a dash of paprika if using. Mix well , add the parsley and serve.
