RICE PUDDING
200 g rice
400 ml milk
4 eggs
100 g sugar
50 g currants
50 g chopped candied peel
Butter for greasing

Boil the rice and allow it to cool

Mix the milk, sugar, eggs, currants and candied peel

Add the rice and mix gently

Grease a dish with butter

Place the mixture in the dish and bake in the oven at a temperature of 180C/Gas4, till a crust forms on top
