QUINOA MUFFINS

 200 g mixed quinoa
 2 tbsp olive oil
 1 medium leek, chopped
 1 medium red pepper, chopped
 1 large clove garlic, chopped
 200 g mozzarella, shredded
 80 g black olives, stoned and chopped
 4 sausages with cheese, chopped
 200 g chopped tomatoes
 1 egg lightly beaten
 Salt and pepper

Preheat the oven to 180C/Gas4

Cook the quinoa according to the package instructions and place in a large bowl

Heat the olive oil in a frying pan and add the leek; cook until softened; add the red pepper and garlic and continue cooking for another 5 minutes; take off the heat and add to the quinoa; stir in the black olives, the sausages and chopped tomatoes and mix well; add the beaten egg and stir again until all the ingredients are well incorporated; season to taste with salt and pepper

Line a 12-hole or two 6-hole muffin trays, with paper muffin cases and divide the mixture between the cases; cook in the preheated oven for about 20 minutes or until the mixture is set and the top of the muffins is golden

Can be served either hot, straight from the oven or cold
