BAKED FISH WITH ARRABBIATA SAUCE

 600 g cod fillets
 1 tbsp olive oil
 1 tbsp fresh lemon juice
 400 g arrabbiata sauce
 25 g fresh breadcrumbs
 2 spring onions, sliced
 40 g mature cheddar, grated
 15 g fresh parsley chopped
 Salt and freshly ground black pepper

Preheat the oven to 190C/Gas5

Dry the cod fillets with kitchen paper and place in a buttered dish measuring about 20cm x 15cm; season with salt and black pepper; mix the olive oil and lemon juice together and sprinkle this over the fish; next spoon the arrabbiata sauce over the top

In a small bowl, mix together the fresh breadcrumbs, the spring onions, half the cheddar cheese and parsley; scatter this mixture over the fish and finally top with the remaining cheese

Bake in the preheated oven for 30-35 minutes
