ONION CROSTINI WITH SWEET CHILI PRAWNS

 30 slices 1cm thick cut from onion baguette
 8 tbsp olive oil
 300 g small prawns
 1 small onion chopped
 2 cloves garlic chopped
 2 tbsp sweet chili sauce
 1 tbsp lemon juice
 2 tbsp chopped parsley
 salt and pepper to taste

preheat oven to 180C/Gas 4
brush baguette slices with olive oil and place on a baking sheet
bake or about 10 minutes until slightly browned
combine prawns, onion, garlic, sweet chili sauce, olive oil, lemon juice and chopped parsley and season with salt and pepper to taste
top baguette slices with prawn mixture up to 1 hour before serving
