CARAMELISED ONIONS ON TOASTED TORTILLA TRIANGLES

 4 flour tortillas, each measuring 15cm (can be cut to size)
 4 tbsp olive oil
 Freshly ground sea salt
 3 medium red onions sliced
 ½ tsp salt
 2 tbsp balsamic vinegar
 2 tbsp honey
 freshly ground black pepper
 200 g dolcelatte cheese

preheat oven to 200C/Gas6
brush tortillas with 1 tablespoon olive oil and cut to size if not available in 15cm
cut each tortilla into 8 triangles
place on baking sheet, grind the sea salt on top and bake for about 7n minutes until lightly browned
heat remaining oil in pan and add onions and salt; cook for about 15 minutes until soft
add vinegar and honey and cook until all the liquid has evaporated and the onions start to caramelise
add the pepper
top the tortilla triangles with the cooked onion mixture and dolcelatte cheese
