CANNELLINI BEAN PATE

 2 x 400g cans cannellini beans drained and rinsed
 50 g mature cheddar cheese, finely grated
 2 tbsps chopped parsley
 3 tbsps olive oil
 Salt and ground black pepper

Put the cannellini beans in a food processor with the olive oil and process to a chunky paste. Transfer to a bowl and stir in the cheese, parsley and some salt and pepper. Spoon into a serving dish and sprinkle a little paprika on top if you like.
