BEEFSTEAK WITH ONIONS

 400 g beef chops for frying (4 people)
 50 ml olive oil
 200 g small pickling onions
 50 ml Marsala
 100 ml hot water

Heat some oil in a pan and sear the meat on both sides to seal the juices in; move to the side of the pan

In another pan add the rest of the oil and fry the onions till they turn brown

Add the wine

Add the onion mixture to the pan with the meat; add the hot water

Cook till it comes to a boil; lower the heat and simmer till the sauce reduces and thickens
