SPICY HARDBOILED EGGS
															 2 small onions, thinly sliced
 2 cloves garlic, crushed
 30 g butter
 100 g ham diced
 100 g frozen peas, defrosted
 5 eggs hard-boiled and quartered
 1 x 500g jar arrabiata sauce
 1 tsp herbes de Provence
 4 tbsp parmesan cheese grated
 1 tbsp paprika

Preheat the oven to 200C/Gas6; sauté the onions and garlic in the butter until lightly golden; transfer to an ovenproof dish; add the ham, peas and eggs

Pour the arrabiata sauce over the eggs

Mix together the herbs, the parmesan and paprika and sprinkle over the top; bake for 25-30 minutes until the cheese has melted and the sauce is bubbling
