QUINOA SALAD

 2 cups quinoa
 1 avocado, sliced
 250 g smoked salmon, cut into pieces
 2 eggs, hard boiled and quartered
 1 small cucumber, chopped
 About 12 cherry tomatoes
 Mint or basil
For the dressing:
 2 tbsps lemon juice
 1 tbsp Dijon mustard
 2 tbsps honey
 2 tbsps olive oil

Rinse the quinoa and boil in 2 cups of water with some salt added. Add all the other ingredients and toss well.

To make the dressing mix all the ingredients in a small jar, shake well and add to the salad before serving.
