 800 g new potatoes, large ones halved
 200 g green beans
 2 tablespoons parsley
 200 g radishes, washed and finely sliced
 200 g cherry tomatoes, washed and halved
 1 cucumber finely sliced
 1 red onion finely sliced
 2 tablespoons olive oil
 1 tablespoon balsamic vinegar
 Salt and pepper

put the potatoes in a pan, cover with cold water and bring to the boil. Cook for 15 minutes until tender but still firm. Drain and set aside


put the beans in a pan of boiling water and simmer for 2-3 minutes; drain and refresh under cold water


mix the potatoes and green beans in a large bowl, add the radishes, tomatoes, onion, cucumber slices and parsley


whisk together the olive oil, balsamic vinegar, salt and pepper and drizzle over the potato salad and serve immediately
