Yields4 Servings
 250 g basmati rice
 1 tbsp sunflower oil
 1 bay leaf
 3 whole cloves
 2-3 cardamom pods
 1 cinnamon stick
 Few drops yellow and red food colouring

Rinse the rice in a sieve until the water runs clear; heat the oil and add the bay leaf, the cloves, the cardamom pods and the cinnamon stick and cook for 1 minutes; add the rice and fry gently, stirring for 1-2 minutes until all the grains are coated in oil


Add 500ml water and bring to the boil; turn down the heat to a gentle simmer, cover and cook for 10 minutes, until all the water is absorbed; don’t lift the pan lid or stir the rice


Remove the pan from the heat and add a couple of yellow and red food colouring; do not stir, but cover and leave to stand for 5 minutes; fluff up the rise with a fork before serving
