PEAR AND WHITE CHOCOLATE PUDDINGS

 100 g butter, softened
 100 g self-raising flour sifted
 100 g light muscovado sugar
 1 tsp cocoa powder
 1 medium egg
 2-3 drops almond extract
 50 g white chocolate chopped
 2 ripe pears
 25 g flaked almonds

Preheat the oven to 180C/Gas4; lightly crease four ramekins with butter

Put half the butter, half the flour and half the muscovado sugar in a bowl, add the cocoa powder, egg and almond extract and beat together until smooth; divide the mixture among the prepared ramekins; scatter half the chocolate on top

Peel, core and chop the pears and divide among the ramekins

Rub together the remaining butter, flour and sugar until the mixture resembles breadcrumbs; stir in the flaked almonds and the remaining chocolate, then sprinkle over the pears and bake for 20 minutes or until golden; serve hot
