PEAR AND ALMOND TART
 
															 150 g ground almonds
 70 g gluten-free flour
 ¾ tsp gluten-free baking powder
 1 egg beaten
 60 ml maple syrup
 2 tbsp coconut oil, melted
 1 tsp vanilla extract
 ¼ tsp sea salt
 ¼ tsp almond extract
 6 or 7 tinned pear halves
 1 tbsp coconut oil and 1 tsp maple syrup to glaze

Preheat the oven to 180C/Gas 4; grease the bottom of a tart pan and line with baking parchment

Mix the ground almonds, gluten flour and baking powder together in a bowl

Whisk the egg, maple syrup, coconut oil, vanilla extract, salt and almond extract together in another bowl; fold in the ground almond mixture to form a sticky dough

Press the dough into the prepared tart pan; arrange the pear halves on top

Heat the coconut oil and maple syrup together; score the pears and brush with the glaze

Bake in the preheated oven for about 25 minutes or until the top is golden
