LEMON AND MUSTARD CRUSTED SALMON

 6 salmon fillets
 Zest of one lemon
 3 large lemons sliced thinly
 60 g fresh white breadcrumbs
 2 cloves garlic chopped
 2 tablespoons wholegrain mustard
 1 tablespoons fresh dill chopped
 2 tablespoons fresh parsley chopped

preheat the oven to 180C/Gas4; spread the lemon slices on the base of a large oven proof dish and arrange the salmon fillets, skin side down, on top

mix together the lemon zest, breadcrumbs, garlic, mustard, dill and parsley; season and press onto the top of each salmon fillet

bake for about 20 minutes or until the salmon is cooked through and the topping is slightly browned; serve immediately
