GARLIC CHEDDAR POPCORN BALLS
4 cloves garlic
2 teaspoons salt
450 g cheddar cheese, grated
1 teaspoon ground cumin
½ teaspoon cayenne pepper
1 packet microwave popcorn
A little butter for forming

Line 2 large baking trays with nonstick baking paper

Peel the garlic and mince finely with the salt; this will prevent it from sticking and releases the garlic juices; mix the garlic with the cheese, cumin and cayenne pepper

In a large microwave safe bowl, layer the popcorn with the cheese mixture, making sure that the cheese is spread evenly through the popcorn; place the bowl in the microwave, cover with pierced cling film and cook on high for 1 minute; give the bowl a shake and turn

Cook for 1 minute more being careful not to let it burn; remove from the microwave and leave to cool slightly until easier to handle and with buttered hands, quickly form the mixture into balls; place on the paper lined baking trays to cool
