FTIRA “MY WAY”
Local round flat loaf with hole in the middle
One large ftira or 2 small one
2 tbsps extra virgin olive oil
2 tsps tomato paste
8 slices fried or grilled aubergines (approx 1 aubergine)
3 sliced tomatoes
8 slices cheddar cheese
8 black olives stoned and halved
4 anchovy fillets cut in half
2 tsps dried oregano

Cut open the ftira and sprinkle both halves with olive oil and spread the tomato paste. Arrange all the othe ingredients on the bottom half of the ftira and sprinkle the oregano over it. Cover with the top half. Wrap it in foil and bake in a hot oven for about 10 minutes, until crispy and the cheese has melted. Serve hot or just warm.
