Cucumber and Salmon rounds

Yields40 Servings
 250 g cream cheese
 210 g red or pink salmon, drained
 1 tbsp sour cream
 1 tbsp mayonnaise
 12 tsp lemon juice
 1 tbsp finely chopped fresh coriander
 1 tbsp finely chopped fresh chives
 2 tbsp finely chopped thyme
 4 cucumbers, thickly sliced
 Dill or thinly shredded red pepper to decorate

- Beat the cream cheese in a small bowl until soft and creamy; add the salmon, sour cream, mayonnaise, lemon juice, coriander, chives, thyme and salt and pepper
- Beat for 1 minute or until combined
- Place a teaspoon of the cheese mixture on each cucumber round and decorate
