500 g cougettes
75 g bacon cubes
3 tbsps oil
1 tbsp chopped fresh thyme
Salt and freshly ground black pepper
Freshly squeezed juice of ½ lemon
Trim the courgettes and cut into cubes. Heat the oil in a frying pan, add the bacon and fry until golden. Add the courgettes and fry over a brisk heat for 3 – 4 minutes, tossing frequently until golden, then add the thyme, pepper and salt, if needed. Season with a squeeze of lemon juice and serve immediately.
