Brussels Sprouts with Ham and Gouda Cheese

 1 kg Brussels sprouts
 200 g ham, thickly slided
 90 g butter
 1 pinch fresh grated nutmeg
 100 g Gouda cheese grated
 1 tbsp chives

trim the sprouts discarding the outer leaves; slice off the base and cut a cross in it

cook in a large pan of boiling, salted water for about 15 minutes until well cooked but not soft

dice the ham and sauté in half the butter; add the sprouts and nutmeg and mix well

melt the remaining butter and brown slightly

drizzle over the sprouts and stir in the Gouda cheese

snip the chives and sprinkle over the sprouts

serve immediately
