BAKED CHICKEN NACHOS

 200 g tortilla chips
 125 g cream cheese
 150 g mozzarella
 30 g mature cheddar, grated
 1 tsp butter
 1 red chilli, deseeded and finely sliced
 150 g cooked chicken breast
 2 tbsp honey
 2 ripe avocados
 Juice of ½ lime
 2 tbsp grated parmesan
 Coriander leaves to serve

Preheat the oven to 200C/Gas6; spread half the tortilla chips out in a large baking tray; spoon the cream cheese across the chips; tear the mozzarella into pieces and dot over the chips; top with the rest of the tortilla chips and sprinkle the grated cheddar on top; bake in the pre-heated oven for 10 minutes

Heat the butter in a frying pan and add the chilli and the chicken and fry for about 1 minute; add the honey and heat on a low temperature for around 3 minutes, stirring all the time; take off the heat and leave aside for a few minutes

Mash the avocado and add the lime juice and mix well

Remove the chips from the oven; top with the chicken, honey and chilli mixture and add spoonfuls of the avocado; sprinkle over the parmesan and coriander and serve immediately

You can use salmon instead of chicken or use half and half
