HEALTHY CHICKEN NUGGETS

 1 tbsp olive oil
 1 small onion finely chopped
 1 medium carrot grated
 1 large green apple, peeled and grated
 1 chicken breast – about 350g – cut into chunks
 1 tbsp chopped fresh parsley
 1 tsp fresh thyme
 50 g wholemeal breadcrumbs
 1 chicken stock cube crumbled
 Flour for coating
 Vegetable oil for frying

Heat the olive oil in a pan and saute half the onion and all the grated carrot for 3 minutes, stirring occasionally; using your hands, squeeze out the excess liquid from the grated apple

In a food processor, whiz the grated apple, chicken, sautéed onion and carrot, raw chopped onion, parsley, thyme, breadcrumbs and chicken stock cube for a few seconds; season with salt and pepper to taste

Form the mixture into 20 walnut-sized balls, roll in flour and fry in 1cm oil for 4-5 minutes until lightly golden and cooked through; serve with tomato ketchup if you like
