VEGETARIAN COTTAGE PIE

Serves 6-8

Ingredients

10g dried porcini mushrooms

2 large leeks

3 carrots

500g swede

500g celeriac

Olive oil

3 sprigs of fresh rosemary

1 tsp cumin seeds

2kg potatoes

40g unsalted butter

1 tsp milk

1 onion

1 tsp Marmite

3 tbsp tomato pure

400g tin lentils

 

Method

-          Preheat the oven to 190C/Gas5; place the porcini in a blender and cover with 600ml boiling water; slice the leeks 2cm thick; then scrub the carrots, swede and celeriac and chop to roughly the same size; drizzle 2 tablespoons of oil into a large pan on a medium heat, strip in the rosemary, fry for 1 minute, then remove to a plate with a slotted spoon; add the cumin seeds and prepared vegetables to the flavoured oil, season with sea salt and black pepper and cook for 30 minutes, stirring regularly

-          Meanwhile, peel and roughly chop the potatoes, cook in a pan of boiling salted water for 15 minutes, or until tender, then drain well; mash with the butter and milk and season to taste; quarter the onion, add to the porcini in the blender along with the Marmite and tomato puree and whiz until smooth; pour into the veg pan and cook for 20 minutes, or until dark, stirring regularly and scraping up any sticky bits from the bottom of the pan

-          Add the lentils with the juice and all and bring to boil, then season to taste; pour the vegetable mixture into an ovenproof dish and spoon over the mash, place on a tray and bake for 30 minutes or until lightly golden and bubbling at the edges, then sprinkle over the crispy rosemary and serve

-          Sahhan il-forn ghal 190C/Gas5; poggi l-porcini go blender u ghatti b’ 600ml ilma jaghli; qatta’l-kurrat fi slices ta’2cm; qaxxar il-karrotti, is-swede u ic-celeriac u qattaghhom f’bicciet indaqs; roxx 2 imgharef zejt taz-zebbuga go borma kbira, fuq nar medju, nehhi l-weraq mill-klin u ithafhhom f’izejd; ghaqli ghal minuta, imbaghad poggihom fuq platt; zid iz-zerriegha tal-kemmun u l-haxix maz-zejt, hawwar bil-melh u bzar u sajjar ghal 30 minuta, filwaqt li thawwad minn hin ghall-iehor

-          Sadanittant, qaxxar u qatta’l-patata f’bicciet kbar u sajjarha f’borma bl-ilma bil-melh, jaghli, ghal 15 il-minuta jew sakemm issir; saffi sew; ghaffiga mal-butir u l-halib u hawwar ghal-gosti tieghek; qatta’l-basla f’erba u zidha mal-porcini gol-blender flimkien mal-Marmite u l-kunserva u farrak sakemm ikollok tahlita lixxa; ferragh goll-borma mal-haxix u sajjar ghal 20 minuta sakemm tiskura, filwaqt li thawwad regolarment u tqaxxar il-bicciet li jkun wehlu fil-qiegh

-          Zid l-ghads flimkien mal-ilma taghhom u hallih jiftah jaghli imbaghad hawwar ghal-gosti tieghek; ferragh it-tahlita go dixx tal-forn u ifrex il-patata mghaffga fil-wicc, poggi fuq dixx u sajjar ghal 30 minuta sakemm tihmar ftit u tibda tbaqbaq fil-gnub, imbaghad roxx il-klin imqarmecc u servi
