CHOCOLATE AND CARAMEL BROWNIES

Makes 16 squares

Ingredients

260g caramel sauce

150g unsalted butter

200g caster sugar

100g golden syrup

250g dark chocolate

4 medium eggs, beaten

1 tsp vanilla extract

100g plain flour

4 x 32g Crunchie bars

 

Method

-          Place the caramel in the fridge overnight

-          Preheat the oven to 170C/Gas3; grease and line a 20cm square fixed-base cake tin; put the butter, caster sugar and syrup in a saucepan and place over a medium heat; stir the mixture until it is smooth and the sugar has almost melted; remove from the heat and stir in the chocolate until smooth; pour into a bowl and cool for 20 minutes until lukewarm, then mix in the eggs and vanilla; sift in the flour and a pinch of salt and fold through until just combined

-          Pour half of the mixture into the tin and use a tablespoon to drop over 16 equally sized spoonfuls of the caramel; sprinkle on the shards of 2 Crunchie bars, then pour the remaining brownie mixture over the top to cover; bake for 40-45 minutes. The brownie will still have a wobble to it, but it will set during cooling; sprinkle over the remaining crunchie shards if using and press in very lightly

-          Cool in the tin for 20 minutes, then transfer to the fridge for 2 hours to set before slicing

-          Sahhan il-forn ghal 170C/Gas3; idlek u iksi forma kwadra tal-cake ta’20cm bil-qieh fiss; poggi l-butir, iz-zokkor u l-golden syrup go borma u poggihom fuq nar medju; hawwad sakemm it-tahlita tillixxa u z-zokkor ikun kwazi inhall kollu; nehhi minn fuq in-nar u zid ic-cikkulata u hawwad sakemm iddub; ferragh go skutella u halliha tiksah ghal 20 minuta sakemm tkun fitla imbaghad zid il-bajd u l-vanilla u hawwad; gharbel id-dqiq u l-melh u dahhal fit-tahlita sakemm kemm, kemm jithaltu

-          Ferragh nofs it-tahlita gol-forma tal-cake u waqqa’16 l-imarfa indaqs tal-karamella fil-wicc; roxx il-frak minn 2 biecciet tac-cikkulata , imbaghad ferragh il-kumplament tat-tahlita; sajjar ghal 40-45 minuta; il-brownie se tkun ghada ratba fin-nofs imma imbaghad taqghad meta tiksah; roxx il-kumplament tal-bicciet tac-cikkulata mfarrka u ghafashom ftit l-isfel

-          Halliha tiksah ghal 20 minuta gol-forma imbaghad poggiha gol-fridge ghal saghtejn qabel ma’taqtaghha.
