SOFT AMARETTI

Makes about 20

Ingredients

250g ground almonds

200g granulated sugar

3 large egg whites

½ tsp almond extract

Icing sugar for dusting

 

Method

-          Heat the oven to 170C/Gas3; line two baking sheets with non-stick baking paper

-          in a large mixing bowl, mix the ground almonds and granulated sugar with a pinch of salt

-          In a separate bowl, whisk the egg whites to stiff peaks using an electric mixer; stir in a spoonful of the egg whites into the dry ingredients until almost combined, then carefully fold in the remaining egg whites in 2 batches, using a metal spoon, until just combined; gently stir in the almond extract

-          Roll 1 heaped tbsp of the mixture at a time into balls; put each ball on the prepared baking sheets, spaced 3cm apart; bake for 15-20 minutes until they have a very light brown curst; leave to cool on the trays for 10 minutes, then slide the baking paper off onto a wire rack to cool completely; generously dust the amaretti with icing sugar to serve

-          Sahhan il-forn ghal 170C/Gas3; iksi zewg pjanci tal-forn bil-karta tal-forn

-          Go skutella kbira, hallat flimkien il-lewz midhun u z-zokkor ohxon flimkien ma ponta melh

-          Go skutella ohra, habbat l-abjad tal-bajd sakemm ghaqdu sew; hawwad mgharfa mill-abjad tal-bajd ma’l-ingredjenti niexfa sakemm tkun kwazi thalltet sew; imbaghad dahhal bil-mod l-abjad tal-bajd li fadal f’zewg drabi, sakemm ikunu kemm, kemm thaltu; zid l-estratt tal-lewz bil-galbu

-          Gerbeb mgharfa mburgata tat-tahlita f’ballun; poggi dawn il-blalen fuq il-pjanci tal-forn li ppreparajt, 3cm il-bod minn xulxin; sajjar ghal 15-20 minuta sakemm jihdu kulur dehebi carr; hallihom jikshu fuq it-trays ghal 10 minuti, mbaghad zerzaq il-karta bl-amaretti ghal fuq rack tal-wire u hallihom jikshu kompletament; roxx l-icing sugar abbondantament fuqhom qabel mas-servihom
