LEFTOVERS QUICHE

Serves 8

Ingredients

500g shortcrust pastry

2 medium egg yolks, beaten

4 medium eggs

250ml milk

Freshly grated nutmeg

175g mature cheddar, grated

A combination of leftovers:

8 sausages wrapped in bacon,

About 125g stuffing,

about 125g roasted parsnips and carrots

 

Method

-          Roll out the pastry. Line a 23cm diameter round tin with the pastry and prick with a fork. Chill in the freezer for 10-15 minutes until firm

-          Preheat the oven to 200C, Gas6; line the pastry case with baking paper and fill with baking beans; bake blind for 20 minutes or until golden brown; remove the beans and brush the pastry case with a little of the beaten yolks; return to the oven tor 5 minutes until crisp, then remove and cool; reduce the oven temperature to 180C/Gas4

-          Beat the remaining egg yolks and whole eggs together and whisk in the milk, seasoning and some grated nutmeg; sprinkle half the cheese over the pastry base to cover, then add the leftovers, roughly breaking them up as you go, slide the quiche into the oven and carefully pour in the egg mix, then sprinkle with the rest of the cheese

-          Cook at the reduced temperature for 45-50 minutes or until just set to the touch; leave to cool slightly before serving either slightly warm or at room temperature

-          Iftah l-ghagina; Iksi forma tonda ta’23cm bl-ghagina u taqqabha b’furketta; poggi gol-freezer ghal 10-15 il-minuta sakemm tibbis

-          Sahhan il-forn ghal 200C/Gas6; iksi l-forma tal-ghagina bil-karta tal-forn u poggi fazola jew baking beans u sajjarha ghal 20 minuta jew sakemm tihmar; nehhi l-fazola u idlek il-forma tal-ghagina bi ftit mil-isfra tal-bajd; erga poggiha fil-forn ghal 5 minuti sakemm titqarmec, ohrogha u halliha tiksah; baxxi t-temperatura tal-forn ghal 180C/Gas4

-          Habbat l-isfra tal-bajd li fadal u l-bajd shih flimkien u zid il-halib, melh u bzar u ftit noce moscata; ferrex nofs il-gobon fuq il-qiegh tal-forma tal-ghagina imbaghad zid il-fdalijiet; qattaghhom f’bicciet kbar int u qiegheda izzidhom; poggi l-quiche gol-forn u ferragh bil-mod it-tahlita tal-bajd, imbaghad ferrex il-kumplament tal-gobon

-          Sajjar ghal 45-50 minuta jew sakemm taghqad; halliha tiksah ftit qabel mas-serviha ftit shuna
