CHEESE AND CHIVE COOKIES

Makes about 30

Ingredients

125g self-raising flour, sifted

125g butter, cut into pieces

60g hard blue cheese, crumbled

2 tbsp grated parmesan cheese

3 tbsp snipped fresh chives

4 tbsp sesame seeds

 

Method

-          Place the flour, butter, blue and parmesan cheeses and chives in a food processor and process until ingredients cling together; turn onto a lightly floured surface and knead lightly; shape dough into a ball, wrap in clingfilm and chill for 30 minutes

-          Roll heaped teaspoons of mixture into balls, then roll in sesame seeds to coat; place balls on lightly greased baking trays, flatten slightly with a fork and bake for 10 minutes at 220C/Gas8 or until golden; stand on trays for 3 minutes, then transfer to wire racks to cool; store cookies in an airtight container
