PEANUT BUTTER FUDGE

Makes 16-20 pieces

Ingredients

Fudge

1 tin condensed milk

150ml double cream

450g caster sugar

2 tbsp smooth peanut butter

To finish

200g dark chocolate

16-20 white chocolate buttons

 

Method

-          Line a 20cm x 20cm baking tin, with baking paper; put all the ingredients for the fudge in a pan, bring to the boil, then reduce the heat and simmer for 10-15 minutes, stirring continuously

-          If you have a sugar thermometer, it should read 115C, otherwise drop a bit of mixture into iced water and see if it produces a soft ball

-          Remove the pan from the heat and beat for 3-4 minutes until thick; while it is still warm and fluid, pour into the lined tin and allow it to set

To finish

-          Break the chocolate into small pieces and melt either in the microwave or in a bowl over a pan of simmering water; allow to cool slightly

-          Pour the chocolate on top of the fudge and mark into 16 or 20 pieces; place a white chocolate button on each square; allow to set and cut into squares.

-          Iksi forma tal-kejk ta’ 20cm x 20cm, bil-karta tal-forn; poggi l-ingredjenti kollha tal-fudge go borma, hallihom jifthu jaghlu imbaghad baxxi n-nar u halli t-tahlita t-tektek ghal bejn 10-15 il-minuta, filwaqt li thawwad il-hin kollu

-          Jekk ghandek termometru taz-zokkor, it-temperatura ghandha tkun 115C; jekk le itfa ftit mit-tahlita go tazza bl-ilma kiesah hafna u ara jekk issirx bocca ratba

-          Nehhi minn fuq in-nar u habbat sew ghal 3-4 minuti sakemm jaghqad ftit; meta t-tahlita tkun ghada shuna u likwida, ferraghha gol-landa u halliha taqghad

-          Farrak ic-cikklulata go skutella u dewwibha jew gol-microwave jew fuq borma bl-ilma itektek; halliha tiksah ftit

-          Ferragh ic-cikkulata fuq il-fudge u mmarka 16-20 il-kwadretta; poggi buttuna tac-cikkulata bajda fuq kull kwadretta; halliha taqghad u aqta’f’kwadretti
