PUMPKIN, CINNAMON AND PECAN MUFFINS

Makes 12

Ingredients

550g grated butternut squash

90g brown sugar

2 tbsp maple syrup

375g self-raising flour

175g brown sugar

1 tsp ground cinnamon

30g pecans, finely chopped

2 eggs, lightly beaten

2 tsp vanilla extract

125ml buttermilk

125ml vegetable oil

Cinnamon Sugar Pecans

180g pecans, chopped

1 ½ tbsp caster sugar

2 tsp vanilla extract

½ tsp ground cinnamon

 

Method

-          Preheat the oven to 180C/Gas4; place the butternut squash, sugar and maple syrup in a large frying pan over a high heat, cook, stirring, for 8 minutes or until just soft then set aside

-          To make the cinnamon sugar pecans, place the pecans, sugar, vanilla and cinnamon in a bowl and mix to combine; set aside

-          Place the flour, sugar, cinnamon and chopped pecans in a large bowl and mix to combine; add the eggs, vanilla, buttermilk, oil and butternut squash mixture; mix until just combined; divide the mixture between12 well-greased muffin tins; spoon the cinnamon sugar pecans on top of the muffins, pressing them in gently; bake for 20-25 minutes or until cooked when tested with a skewer; set aside to cool for 2 minutes in the tins before turning out on to a wire rack to cool completely
