SPICY SALMON CHUNKS

 

Makes 4-6 servings

Ingredients

200g breadcrumbs made from wholemeal bread

2 tsp turmeric and paprika

1 tbsp olive oil

400g trimmed skinless salmon

2 medium eggs, beaten

Ricotta and herb dip

50g mixed mint and basil leaves

3 spring onions, chopped

1 clove garlic

2 tbsp olive oil

250g ricotta

1 tbsp lemon juice

 

Method

-          Preheat the oven to 200C/Gas6 and line a baking tray with parchment; combine the breadcrumbs with the spices and olive oil until well mixed, spread them out on the baking tray and place in the oven for 15 minutes to crisp, turning occasionally; remove to a large bowl

-          Cut the salmon into 2cm cubes; dip each one into the egg, followed by the breadcrumbs until evenly coated and arrange on the lined baking tray; bake for 6-8 minutes until cooked and crisped

-          Serve with the ricotta and herb dip

 

To make the ricotta and herb dip

-          Whiz together in a food processor, the mixed mint and basil leaves, the spring onions, the garlic clove and the olive oil together with some salt, until you have a paste

-          Add the ricotta and whiz again and finally whiz in 1 tbsp lemon juice, cover and chill

-          Sahhan il-forn ghal 200C/Gas6 u iksi tray tal-forn bil-karta tal-forn; hallat sew flimkien, il-frak tal-hobz, l-spices u iz-zejt taz-zebbuga; ifrixhom fuq it-tray u poggihom fil-forn ghal 5 minuti sakemm jitbasktu; poggihom go skutella kbira

-          Qatta’s-salamun f’dadi ta’2cm; ghaddashom l-ewwel gol-bajd wahda, wahda mbaghad gol-breadcrumbs sakemm jinksew sew; poggihom fuq it-tray tal-forn u sajjarhom ghal 6-8 minuti sakemm ikunu saru u jitbasktu; servihom bid-dip tal-irkotta u hwawar

-          Poggi go food processer il-weraq tan-naniegh u l-habaq, il-basal ahdar, is-sinna tewm u z-zejt taz-zebbuga u ftit melh u farrak sew sakemm ikollok paste

-          Zid l-irkotta u erga farrak flimkien ma mgharfa meraq tal-lumi; ghatti u poggi gol-fridge
