4 x 225g sweet potatoes

250g feta thinly sliced

125g chorizo thinly sliced

4 tbsp olive oil

1 lemon quartered

4 tbsp coarsely chopped fresh coriander



-          Preheat the oven to 180C/Gas4; slice each potato into sections about 2cm thick, taking the cut almost to the bottom without slicing all the way through and giving you around five slits to fill

-          Cut 4 pieces of foil and place on top of each one a piece of baking paper, both should be big enough to wrap the potatoes in; place a sweet potato in the centre of each paper

-          Slip a couple of pieces of feta and one of chorizo between each slice, tucking in as necessary; drizzle a tablespoon of oil over each potato, press the ends together slightly to reform the shape and wrap up tightly, first in the baking paper and then in the foil

-          Arrange the parcels in a roasting dish spaced a little way apart, place in the oven and bake for 1 ¼ hours

-          Place the packages on plates, open them out, squeeze over some lemon and scatter with the coriander and serve

-          Poggi madwar zewg bicciet feta u bicca chorizo f’kull qasma; roxx mgharfa zejt fuq kull patata u ghafas it-truf ftit biex terga taghmilhom il-forma; gezwirhom issikkati l-ewwel fil-karta tal-forn imbaghad fil-foil

-          Poggihom fuq dixx tal-forn bi ftit spazju bejn kull wahda u sajjarhom ghal 1 ¼

-          Poggi l-paketti fuq platti, iftahhom u ghasar ftit meraq tal-lumi fuq kull wahda; roxx il-kosbor fil-wicc u servi
