APPLE AND GRAPE FLAN

Serves 6-8

Ingredients

50g butter

225g digestive biscuits, crushed

Filling

225g full fat soft cheese

50g caster sugar

2 eggs

3 tbsp double cream

1 tsp vanilla essence

Topping

1 red apple

1 green apple

225g black grapes

6 tbsp apricot jam

 

Method

-          Preheat the oven to 190C/Gas5 and heat a baking tray

-          Melt the butter; add the crushed biscuits and mix thoroughly; press the mixture over the base of a 23cm loose bottomed flan tin; chill for about 10 minutes

-          For the filling, beat the soft cheese until smooth; beat in the sugar, eggs, cream and vanilla essence; pour over the crumb base; put the flan tin on the hot baking tray and bake for 30-35 minutes, or until the filling is set

-          Transfer the flan to a wire rack; leave to cool completely in the tin for about 2 hours

-          For the topping, quarter, core and thinly slice both apples; arrange in a circle, alternating the colours, on top of the filling; arrange the grapes around the edge and in the centre; heat the jam in the microwave and brush the hot jam over the apples and grapes

-          Ghall-mili, habbat il-gobon sakemm jilixxa; zid iz-zokkor, il-bajd, il-krema u l-essenza tal-vanilla; ferragh it-tahlita fuq il-basi tal-gallettini; poggi l-forma tal-flan fuq id-dixx shun u sajjar ghal 30-35 minuta, jew sakemm il-mili jaghqad

-          Poggi l-flan fuq rack tal-wire u halliha tiksah kompletament ghal madwar 2 sighat, gol-forma

-          Ghal-wicc, qatta’t-tuffieh f’erbgha, nehhilhom iz-zerriegha u qattaghhom fi slajsis; irranghom f’circu b’wahda minn kull kulur ma’genb xulxin; poggi l-gheneb maddawra ta’barra u fin-nofs; sahhan il-jam u idilku fuq it-tuffieh u l-gheneb
