SPECIAL FRIED RICE

Serves 4

Ingredients

4 egg whites and 2 egg yolks

4 tbsp soy sauce

Black pepper

2 tbsp vegetable oil

2 garlic cloves, chopped

1 small red chilli, chopped

4 spring onions, sliced

200g cauliflower

200g cooked brown rice

1 tsp Chinese 5 spice

200g mixed frozen vegetables, defrosted

70g cooked prawns

30g wafer-thin ham

50g cooked chicken

 

Method

-          Mix the egg whites and yolks together with 2 tablespoons of the soy sauce and some black pepper; heat 1 tablespoon of the oil in a frying pan over a medium heat, then add the eggs and spread out evenly; gently draw the edges of the pan so you end up with a nice flat omelette; once fully coked about 3-4 minutes, put the omelette on a plate

-          Process the cauliflower to rice consistency; heat the remaining tablespoon of oil in a large non-stick frying pan on high heat; fry the garlic, chilli and spring onions for 1-2 minutes, then add the cauliflower rice and stir well; cook for 3-4 minutes stirring well to release some of its moisture

-          Add the brown rice, Chinese 5 spice and the remaining 2 tablespoons of soy sauce; add the defrosted vegetables to the frying pan and stir fry for a further 2-3 minutes

-          Add the prawns, ham and chicken and cook for 3-4 minutes to warm through, ensuring they are properly heated

-          Slice the omelette and mix into the pan and serve

-          Hallat flimkien l-abjad tal-bajd u l-isfra ma 2 imgharef mis-soy sauce u ftit bzar iswed; sahhan mgharfa miz-zejt go tagen kbir fuq nar medju, imbaghad zid il-bajd u ifrexhom mat-tagen kollu; igbor bil-mod il-bajd mit-tarf tat-tagen biex tispicca b’omlette catt; meta jkun sar wara madwar 3-4 minuti, poggih go platt

-          Farrak il-pastard go food processor sakemm isir qisu ross; sahhan l-imgharfa zejt li fadal go tagen kbir li ma jwahhhalx,  fuq nar oghli; sajjar it-tewm, ic-chilli u l-basal ahdar ghal 1-2 minuti, imbaghad zid il-pastard u hawwad seww; sajjar ghal 3-4 minuti biex johrog ftit mill-umdita tal-pastarda

-          Zid ir-ross ismar, ic-Chinese 5 spice u l-kumplament tas-soy sauce; zid il-haxix li tkun nehhejtlu s-silg u kompli sajjar ghal 2-3 minuti ohra

-          Zid il-gambli, il-perzut u t-tigieg u sajjar ghal 3-4 minuti sakemm jishnu sew; kun zgur li sahnu sew

-          Qatta’l-omlette fi slices u zidu ma’kollox u servi
