FRUIT AND NUT POLENTA CAKE

Serves

Ingredients

100ml vegetable oil

150g caster sugar

2 eggs separated

2 tbsp milk

90g peeled and grated carrot

60g walnuts

50g raisins

60g polenta

60g ground almonds

½ rounded tsp gluten-free baking powder

½ tsp ground ginger

½ tsp ground cinnamon, plus 1 tsp extra for dusting

200ml Greek yogurt to serve

2 tsp icing sugar

 

 

Method

-          Preheat the oven to 190C/Gas5; grease and line a springform 20cm tin with baking paper; whisk the oil and caster in a large bowl, then whisk in the egg yolks and milk and fold in the carrot, walnuts and raisins; combine the polenta and ground almonds in a bowl, then sift in the baking powder and stir in the spices; stir into the carrot mixture

-          Whisk the egg whites in another bowl until they are stiff and fold them into the cake mixture in two batches; transfer the mixture to the cake tin and bake for 30-35 minutes until shrinking from the sides and a skewer inserted into the centre comes out clean; run a knife around the top edge of the cake, which will be very delicate and leave it to cool in the tin

-          Just before serving, spoon the yogurt over the cake. Mix together the icing sugar and extra cinnamon, then dust over the cake and scatter over some dried cranberries if you wish

-          Sahhan il-forn ghal 190C/Gas5; idlek u iksi bil-karta tal-forn, forma tal-molla tal-kejk ta’20cm; habbat iz-zejt u z-zokkor go skutella kbira, imbaghad habbat l-isfra tal-bajd u l-halib u dahhal fit-tahlita l-karrotti, l-gewz u z-zbib; hallat fimkien il-polenta u l-lewz midhun go skutella ohra, imbaghad gharbel il-baking powder u l-ispices fuq kollox; dahhal din it-tahlita go dik tal-karrotti

-          Habbat l-abjad tal-bajd go skutella ohra sakemm jaghqdu mbaghad dahhalhom go t-tahlita tal-kejk f’zewg drabi; poggi t-tahlita tal-kejk gol-forma u sajjar ghal 30-35 minuta sakemm il-kejk jibda jinxtorob mil-gnub u meta d-dahhal seffud johrog nadif; ghaddi sikkina mad-dawra tax-xifer tal-forma tal-kejk, li jkun delicat hafna u hallih jiksah gol-forma

-          Ezatt qabel mas-servi, ifrex l-yogurt fuq il-kejk; hallat flimkien l-icing sugar u t-trab extra tal-kannella u roxx fuq il-yogurt; jekk trid itfa ftit cranberries niexfa fil-wicc u ftit frak tal-gewz
