ARTICHOKE BROAD BEAN AND FARRO SALAD

 

Serves 6

Ingredients

250g pearled farro

1 x 520g jar Carciofi alla Romana

Grated zest of ½ lemon

Juice of 1 lemon

5 tbsp olive oil
120ml white wine

500g shelled broad beans

Salt and freshly ground black pepper

Small bunch of mint leaves

150g ricotta salata

 

Method

-          Put the farro in a large saucepan, cover with a few centimetres of water and bring to the boil; simmer for 20-25 minutes until it is al dente, then drain; transfer to a large bowl

-          Simmer the wine in a pan for a minute to reduce it slightly, then add the broad beans and simmer for 3 minutes until almost tender, add the drained and quartered artichokes together with 3 tablespoons of the olive oil and cook for a minute to heat through; season with salt and pepper to taste then add the lemon juice and the zest

-          Add the artichokes and broad beans to the farro; add the mint u season again; place in a serving dish and crumble the ricotta salata over the top; pour the remaining olive oil over the salad and some more mint leaves

-          Poggi l-farro go borma kbira, ghatti bi ftit centimetri tal-ilma u hallih jiftah jaghli; hallih itetek ghal 20-25 minuta sakemm ikun al dente, saffih u poggih go skutella kbira

-          Tektek l-inbid go borma ghal minuta biex jonqos ftit, zid il-ful u tektek ghal 3 minuti sakemm kwazi jkun sar, saffi l-qaqocc u qattaghhom f’erbgha u zidhom mal-ful flimkien ma 3 imgharef zejt taz-zebbuga u sahhan ghal minuta; hawwar bil-melh u bzar kemm tiggosta mbaghad zid il-meraq u l-qoxra tal-lummija

-          Zid il-qaqocc u l-ful mal-farro; ixhet il-weraq tan-naniegh u erga hawwar bil-melh u bzar; poggi go dixx li ses-servi fih u farrak l-irkotta salta fuq l-insalta; roxx iz-zejt li fada u ftit weraq tan-naniegh
