PISTACHIO AND CHERRY SQUARES

Makes about 16

Ingredients

90g unsalted butter, softened

500g puff pastry

165g caster sugar

3 eggs

300g Greek Yogurt

300g shelled pistachio nuts, ground

1 ½ tsp baking powder, sifted

1 tsp ground cinnamon, sifted
150g glace cherries halved

Icing sugar for decoration

 

Method

-          Butter and line a 25cm square tin; preheat the oven to 190C/Gas5; cut a square of puff pastry to fit the base of the tin and lay it in place

-          Cream together the butter and sugar in a food processor, then add the eggs one at a time, followed by the yogurt; add the ground pistachios, baking powder and cinnamon; smooth the mixture on top of the pastry, scatter over the cherries and bake for 30-35 minutes until golden and firm; leave to cool

-          Carefully lift the cake out of the tin using the paper sides; dust the top with icing sugar; trim the sides, then cut into about 16 squares; the cake will keep well in an airtight container for several days

150g cirasa maqsuma fi tnejn

Icing sugar biex iz-zejjen

 

-          Idlek u iksi bil-karta tal-forn, forma kwadra ta madwar 25cm; sahhan il-forn ghal 190C/Gas5; aqta forma kwadra tal-ghagina biex toqghod fil-qiegh tal-forma u poggiha f’postha

-          Habbat flimkien go food processor, il-butir u z-zkokkor; zid il-bajd wahda wahda mbaghad zid il-yogurt; zid il-pistacci, il-baking powder u l-kannella; poggi t-tahlita fuq l-ghagina u l-lixxa l-wicc; ferrex ic-cirasa fil-wicc u sajjar ghal 30-35 minuta sakemm jihmar il-wicc u jghaqad; halliha tiksah fil-forma

-          Nehhi l-kejk bil-mod, minn gol-landa bill tuza l-karta; ferrex ftit icing sugar fil-wicc; nehhi t-truf tal-gnub imbaghad qatta’f’sittax il-kwadretta; il-kejk izomm ghal hafna granet go kontenitur maghluq
