CHRISTMAS PUDDING AND CHESTNUT PARCELS

 

Makes about 12

Ingredients

300g Christmas pudding, chopped

100g cooked chestnuts, chopped

50g ground almonds

25g chopped roasted hazelnuts

Zest and juice of 2 tangerines

1 tbsp brandy

1 tbsp mixed spice

50g golden caster sugar

270g filo pastry sheets

50g butter melted

 

Method

-          Preheat the oven to 200C/Gas6; place the Christmas pudding and chestnuts in a saucepan with the clementine zest and juice and brandy and warm until softened; allow to cool

-          Add the ground almonds and chopped roasted hazelnuts and mix well

-          Mix together the mixed spice and sugar

-          Cut the filo sheets in half; brush each half sheet with butter and sprinkle with a little of the spiced sugar, saving about half of it to sprinkle on the rolls before baking; spoon about 2 tablespoons of the Christmas pudding mixture into the corner of each pastry square, then roll up diagonally like a cigar, folding in the edges to encase the filling

-          Brush with more butter and sprinkle the rest of the spiced sugar all over the top of the rolls, place on a baking sheet; repeat until all the pastry and filling are used up; bake in the preheated oven for 20 minutes until golden and crisp

-          Dust with icing sugar and serve warm with any leftover brandy butter

-          Zid il-lewz midhun u l-gellewez imfarrak u hallat sew

-          Hallat flimkien il-mixed spice u z-zokkor

-          Aqta’ l-folji tal-ghagina min-nofs; idlek kull nofs bil-butir u roxx bi ftit mit-tahlita mhawra taz-zokkor; poggi madwar 2 imgharef tahlita tal-pudina fil-kantuniera ta’kull kaxxa ghagina, imbaghad rembel djagonalment bhal sigarru; itwi t-truf biex taghlaq il-mili

-          Idlek b’aktar butir u poggi fuq turtiera; aghmel l-istess procedura sakemm tuza l-ghagina u l-mili kollu; ahmi f’forn imsahhan, ghal 20 minuta sakemm jiehdu kulur dehebi u jitbasktu
