CHICKEN AND SWEET POTATO PIE

Serves 4

Ingredients

1kg sweet potatoes

10 tbsp olive oil

600g chicken thighs and breasts

  skinless and boneless cubed

2 leeks, cut into slices

450g mixed chestnut and white mushrooms

Zest of 2 lemons

4 tbsp wholegrain flour

100ml water

Juice of 1 lemon

6 tbsp crème fraiche

2 tsp wholegrain mustard

 

-          Preheat the oven to 180C/Gas4

-          Peel the potatoes and chop into chunks, toss in 2 tablespoons of the olive oil and bake in the oven for 15-20 minutes or until they are soft

-          Fry the chicken with the leeks in 4 tablespoons of the olive oil for 3 minutes, then add the mushrooms and lemon zest and cook for another 3-5 minutes; the chicken should be around 80 per cent cooked by this point

-          Add the flour to thicken the sauce, stirring for around 2 minutes

-          Add the water and stir in the lemon juice, crème fraiche and mustard, then take off the heat

-          Mash the potatoes with the remaining olive oil

-          Spoon the chicken mixture into a baking dish and spread the mashed potato over the top

-          Bake the pie for 10-15 minutes in the oven

6 imgharef crème fraiche

2 kuccarina mustarda biz-zerriegha

 

-          Sahhan il-forn ghal 180C/Gas4

-          Qaxxar il-patata u qattaghha f’bicciet kbar, hallat ma’zewg imgharef miz-zejt taz-zebbuga u sajjar gol-forn ghal 15-20 minuta sakemm tirtab

-          Ghaqli t-tigieg u l-kurrat ma’erbgha mgharef miz-zejt taz-zebbuga ghal 3 minuti, imbaghad zid il-faqqiegh u l-qoxra mahkuka tal-lummi u sajjar ghal 3-5 minuti; it-tigieg suppost ikun imsajjar 80 fil-mijja bhalissa

-          Zid id-dqiq biex taghqqad iz-zalza, u hawwad ghal 2 minuti

-          Zid l-ilma u l-meraq tal-lummija, il-crème fraiche u l-mustarda, u nehhi minn fuq in-nar

-          Immaxxja l-patata mal-kumplament taz-zejt

-          Poggi t-tahlita tat-tigieg go dixx tal-forn u ifrex il-patata maxx fil-wicc

-          Sajjar it-torta ghal 10-15 il-minuta fil-forn
