PIZZATA

Serves 4

Ingredients

A – Bacon, Mushroom and Gruyere

1 tbsp sunflower oil

100g bacon, chopped

1 small onion finely chopped

250g mushrooms, sliced

6 large eggs

50g gruyere, grated

2 tsp thyme leaves

 

B- Chorizo and Cheddar

200g chorizo sliced

1 small onion, sliced thinly

225g cooked, diced potatoes

6 large eggs

50g mature cheddar, grated

 

C- Courgette, red pepper and goat’s cheese

2 tbsp extra virgin olive oil

200g small courgettes, sliced

1 small onion, finely chopped

1 red pepper, chopped

10 basil leaves

1 tbsp pumpkin seeds

6 large eggs

125g goats’ cheese

 

Method - A

-          Heat the sunflower oil in a frying pan over a medium heat; add the bacon and fry until crisp; transfer to plate

-          add the onion and fry for 2 minutes; add the mushrooms and cook until tender

-          lightly beat the eggs and season; add the Gruyere, thyme leaves and bacon to the eggs and pour into the pan on to the mushroom mixture; cook until the egg begins to set; grill under a preheated grill to medium/high for 2-3 minutes until golden and set; run a spatula around the edge to loosen, slide onto a plate and serve

Method – B

-          fry the chorizo in a frying pan over a medium heat until crisp and set aside

-          using 1 tablespoon of the oil from the chorizo, fry the onion for 3-4 minutes; add the potatoes and spread evenly

-          whisk the eggs, add the cheddar and season

-          return the chorizo to the pan; pour in the egg and cook until beginning to set; grill under a preheated grill to medium/high, for 2-3 minutes until set and golden; run a spatula around the edge, slide on to a plate and serve

Method – C

-          heat the oil in a pan, add the courgettes, the onion and the red pepper and cook gently for 5-7 minutes until soft; add the basil leaves and pumpkin seeds

-          whisk the eggs, crumble in the goats’ cheese and season well; pour the egg mixture into the pan and cook until it begins to set; grill under a preheated grill to medium/high for 2-3 minutes until golden and set; run a spatula around the edge and slide on to plate and serve

100g bacon imqatta’

Basla zghira mqatta’fin

250g faqqiegh mqatta’fi slajsis

6 bajdiet kbar

50g gobon Gruyere, mahkuk

2 kuccarina weraq tat-timu

 

B – Chorizo u gobon Cheddar

200g chorizo mqatta’fi slajsis

Basla zghira

225g patata msajjra u mqatta’f’dadi

6 bajdiet kbar

50g gobon cheddar matur

 

C – Zucchini, bzaru ahmar u gobon tal-moghoz

2 imgharef zejt taz-zebbuga extra vergni

200g zucchini zghar

Basla zghira mqatta’fin

Bzaru ahmar zghir imqatta’

10 weraq tal-habaq

Mgharfa zerriegha tal-qaragh hamra

6 bajdiet kbar

125g gobon tal-moghoz

 

Metodu – A

-          sahhan iz-zejt go tagen fuq nar medju; zid il-bacon u ghaqli sakemm jitbaskat; poggi go platt

-          zid il-basla u ghaqli ghal 2 minuti; zid il-faqqiegh u sajjar sakemm jirtab

-          habbat il-bajd u hawwar; zid il-Gruyere, it-timu u l-bacon mal-bajd u ferragh got-tagen fuq it-tahlita tal-faqqiegh; sajjar sakemm il-bajd jibda jaqad; poggi taht il-grill imsahhan ghal ftit aktar minn medju  ghal 2-3 minuti sakemm jihmar u jaghqad; dahhal spatula mad-dawra tat-tagen u poggi il-pizzata fuq platt u servi

Metodu – B

-          ghaqli c-chorizo go tagen fuq nar medju sakemm jitqarmecc; poggi fil-genb

-          sahhan mgharfa miz-zejt li halla c-chorizo u ghaqli l-basla fih ghal 3-4 minuti; zid il-patata u ifrex fil-qih

-          habbat il-bajd, zid ic-cheddar u hawwar

-          erga poggi c-chorizo got-tagen; ferragh it-tahlita tal-bajd fuqu u sajjar sakemm tibda taghqad; poggi taht il-grill imsahhan ghal ftit aktar minn medju ghal 2-3 minuti sakemm it-tahlita taghqad u tihmar; dahhal spatula mad-dawra tat-tagen u poggi l-pizzata fuq platt u servi

Metodu – C

-          sahhan iz-zejt go tagen, zid iz-zucchini, il-basla u l-bzaru ahmar u sajjar bil-mod ghal 5-7 minuti sakemm jirtabu; zid il-weraq tal-habaq u z-zerriegha tal-qaragh hamra

-          habbat il-bajd, farrak il-gobon tal-moghoz go fihom u hawwar sew; ferragh it-tahlita tal-bajd got-tagen u sajjar sakemm tibda taghqad; poggi taht il-grill imsahhan ghal ftit aktar minn medju ghal 2-3 minuti sakemm taghqad u tihmar; dahhal spatual mad-dawra tat-tagen u poggi l-pizzata fuq platt u servi
