CHOCOLATE AND ORANGE BISCUITS

Makes about 35-40

Ingredients

200g blanched almonds, roasted

4 eggs

300g golden caster sugar

425g plain flour

100g cocoa powder

100g mixed peel

Finely grated zest of 1 orange

1 ½ tsp baking powder

½ tsp salt

 

Method

-          Pre-heat the oven to 180C/Gas4

-          Whisk the eggs and sugar together until pale, thick and fluffy

-          Sift the flour, cocoa powder, baking powder and salt and stir into the egg and sugar mixture; add the mixed peel and the orange zest and mix to combine; add the almonds and knead with your hands to make a stiff dough on a cocoa-dusted work surface

-          Divide the dough in 2 and press into long, thin, loaf shapes about 6cm thick; place onto two lined trays and bake for 30 minutes; remove from the oven and when cold, carefully cut the loaves into 1cm thick slices using a sharp serrated knife

-          Lay them back onto the baking trays and bake for another 10-12 minutes; transfer to a wire rack and allow to cool and crisp up and serve

-          Gharbel id-dqiq, il-kokodina, il-baking powder u l-melh u zid mat-tahlita tal-bajd u zokkor; zid il-konfettura u l-qoxra tal-laringa u hallat sew; zid il-lewz; roxx ftit kokodina fuq il-wicc tal-bank tal-kcina u ghagen b’idejk sakemm ikollok ghagina ibsa

-          aqsam l-ghagina fi tnejn u fforma f’zewg forom qieshom hobz twal, hoxnin madwar 6cm; poggihom fuq zewg trays tal-forn miksijja bil-karta tal-forn, u sajjar ghal 30 minuta; ohrog minn gol-forn u hallihom jikshu; aqta’ l-hobziet fi slajis ta’1cm hxuna b’sikkina bis-snin

-          Poggi dawn is-slajsis fuq it-trays u sajjar ghal 10-12 il-minuta ohra; ohroghom minn gol-forn u hallihom jikshu  u servihom
