CORNED BEEF PIES

 

Serves 4

Ingredient

2tbsp vegetable oil

200g pancetta

1 onion sliced

1 clove garlic, chopped

500g corned beef cut into cubes

6 gherkins

2 carrots diced

200ml bitter beer

200ml beef stock

1 tbsp parsley, chopped

1 tsp caster sugar

Salt and pepper

Beaten egg to glaze

400g puff pastry

 

Method

-          Pre-heat the oven to 180C/Gas4; heat 1 tablespoon vegetable oil in a saucepan and fry the pancetta until crisp; remove and drain on kitchen paper

-          Add another tablespoon of vegetable oil to the pan and fry the onion and garlic for 5-6 minutes, until soft; add the cooked bacon, corned beef cubes, gherkins, carrots, bitter, beef stock, chopped parsley and sugar to the pan and season well with salt and pepper

-          Bring to the boil then simmer for 25 minutes; remove from the heat and let the mixture cool completely to prevent the pastry lid from becoming soggy

-          Roll out the pastry and cut into 4 pieces large enough to cover the pie dishes

-          Divide the filling between 4 individual pie dishes; brush the edges of each pie dish with the beaten egg, sit a pastry lid on top, then trim the pastry to fit; brush the pastry with more beaten egg and bake in the oven for 20 minutes, until crisp and golden; serve with vegetables of your choice

-          Sahhan il-forn ghal 180C/Gas4; sahhan mgharfa miz-zejt go borma u ghaqli l-pancetta sakemm titbaskat; nehhi minn gol-borma u poggi fuq karta tal-kcina

-          Zid l-imgharfa li fadal taz-zejt fil-borma u ghaqli l-basla u t-tewma ghal 5-6 minuti sakemm jirtabu; zid il-bacon, il corned beef, il-hjar zghar, il-karrotti, il-birra, l-istokk, it-tursin imqatta u z-zokkor u hawwar sew bil-melh u bzar

-          Halli t-tahlita tiftah taghli u halliha t-tektek ghal 25 minuta; nehhi minn fuq in-nar u halliha tiksah kompletamnet biex l-ghatu tal-ghagina ma jirtabx

-          Iftah l-ghagina u ghaqta’ f’erbgha bicciet kbar bizzejjed biex jiksu l-wicc tad-dixxijiet tat-torti

-          Qassam it-tahlita bejn 4 dixxijiet tat-torti; idlek ix-xifer ta’kull dixx bil-bajda mhabbta u poggi bicca ghagina fil-wicc; aqta l-ghagina ghad-daqs tad-dixx tat-torti; idlek l-ghagina bil-bajda mhabbta u sajjar gol-forn ghal 20 minuta sakemm il-wicc jitbaskat u jihmar; servi bil-hxejjex li tiggosta
