BEEF AND VEGETABLE PIE

Serves 6

Ingredients

750g beef mince

2 small red onions, finely diced

3 tsp English mustard

450ml hot beef or vegetable stock

3 large sprigs fresh thyme

150g sweetcorn

225ml stout

40g unsalted butter

Sunflower oil for frying

675g sweet potatoes, thinly sliced

675g turnips, thinly sliced

 

Method

-          Preheat the oven to 220C/Gas7; dry fry the mince until brown; add the onions and cook for a further 2-3 minutes; add the mustard, stock, herbs and season; bring to the boil and simmer for 15-20 minutes, stirring occasionally; add the sweet corn and stout and cook uncovered for a further 5 minutes

-          Meanwhile heat the butter and oil in a large frying pan and fry the sweet potato and turnip slices for 3-4 minutes on each side, then drain

-          Place 6 x 10cm metal rings on a foil-covered baking sheet and fill each ring with layers of sweet potato, turnip and mince mixture equally; alternatively layer the sweet potato, turnip and mince in a large oven proof dish

-          Bake for 10-12 minutes, remove and transfer rings to a serving plate; leave to rest for 2-3 minutes before removing the ring; if using an oven proof dish, allow to stand for 2-3 minutes before serving

225ml birra stout

40g butir mhux mielah

Zejt tal-griasol ghal qali

675g patata helwa, mqatta’ fi slajsis irqaq

675g turnips imqattaghjin fi slajsis irqaq

 

-          Sahhan il-forn ghal 220C/Gas7; ghaqli l-kappuljat bla-zejt, sakemm isir kannella; zid il-basal u kompli sajjar ghal 2-3 minuti ohra; zid il-mustarda, l-istokk, il-hxejjex aromatici u bzar u melh; hallih jiftah jaghli u tektek ghal 15-20 minuta, filwaqt li thawwad minn hin ghal iehor; zid il-qamh helu u l-birra u kompli sajjar mikxuf ghal 5 minuti ohra

-          Sadanittant sahhan il-butir u z-zejt go tagen kbir u ghaqli s-slajsis tal-patata helwa u l-gdur ghal 3-4 minuti minn kull nahha

-          Poggi 6 criki tal-metal fuq pjanca tal-forn miksijja bil-foil u imla kull cirku b’saffi tal-patata, tal-gdur u l-kappuljat; tista wkoll tuza dixx tal-forn kbir u tpoggi s-saffi bl-istess mod

-          Sajjar ghal 10-12 minuti, nehhi minn gol-forn u poggi c-criki fuq platt li s-servi fih; hallihom joqghodu ghal 2-3 minuti qabel ma tnehhi c-criki; jekk se tzua dixx kbir, halli t-torta toghqod ghal 2-3 minuti qabel is-servi
