THREE IN ONE ROAST

 

Serves 8-10

Ingredients

350g turkey breast mince

1 Maltese sausage

100g cooked chestnuts, peeled and roughly chopped

50g dried cranberries roughly chopped

750g veal topside

3 sprigs of rosemary

2 ½ kg boneless pork shoulder

50g dried apricots, cut in half

6 sage leaves roughly chopped

Olive oil

Coarse sea salt

 

Method

-          preheat the oven to 180C/Gas 4

-          remove the skin from the Maltese sausage and place in a bowl with the turkey breast mince and chopped chestnuts and mix well; season with salt and pepper

-          form the mixture into a large sausage shape and roll in the chopped cranberries to coat

-          lay the veal flat on a board and place the rosemary on it; put the cranberry coated turkey in the centre and fold the veal around it

-          lay the pork shoulder flat on another board, fat-side down and sprinkle with the chopped dried apricots and sage leaves; place the turkey filled veal on top and fold the pork joint around all the meat; secure with pieces of string, weigh and work out the cooking time*; rub the skin with the olive oil and salt

-          put the meat into the preheated oven and after about 1 hour, cover the ends of the joint with foil

-          remove the joint and stand for 10 minutes before serving

* Cooking time should be 25 minutes per 450g plus 25 minutes

-          sahhan il-forn ghal 180C/Gas4; nehhi l-gilda taz-zalzett Malti u poggih fi skutella flimkien mal-ikkapuljat tad-dundjan u l-qastan; hawwad sew u hawwar bil-melh u bzar

-          rembel din it-tahlita f’forma ta’zalzett kbir; iksi din il-forma fil-cranberries u ara li tinkesa sew

-          iftah il-vitella catta fuq bord u poggi l-klin fuqha; poggi l-ikkapuljat tad-dundjan miksi bil-cranberries fin-nofs taghha u aghlaq il-vitella madwar ir-romblu tal-ikkapuljat

-          iftah l-ispalla tal-majjal fuq bord ohra bin-niha xahmija l’isfel u roxx bil-berquq niexef u l-weraq tas-salvja; poggi r-romblu tal-laham li ppreparajt s’issa fuqha u aghlaq l-ispalla biex tiksi r-romblu kollu; aghlaq sew bl-ispag, ara kemm fiha piz u kkalkula l-hin li hem bzonn biex issir *

-          dahhal il-laham fil-forn u wara madwar siegha, ghatti t-truf bil-fojl

-          ladarba l-laham isir, hallih joqghod ghal 10 minuti qabel isservi

*il-hin ghandu jkun 25 minuta ghal kull 450g u 25 minuta addizzjonali
