PANFORTE

 

Serves 12

Ingredients

2 sheets rice paper

45g dark chocolate, roughly chopped

1 small cinnamon stick

4 whole cloves

4 black peppercorns

¾ tsp grated nutmeg

180g soft brown sugar

90g clear honey

280g unskinned whole almonds, roasted

25g walnuts, roasted

25g hazelnuts, skinned and roasted

115g plain flour, sifted

375g mixed candied fruit, chopped

Icing sugar to dust

 

Method

-          Preheat the oven to 180C/Gas4; grease a 20 x 2.5 cm cake tin; line the base and side with rice paper

-          Melt the chocolate in the microwave in 30 second bursts; grind the cinnamon, cloves and peppercorns until powdered and stir into the chocolate with the nutmeg

-          Place the sugar and honey in a pan and stir slowly to the boil, then boil for 30 seconds, stirring; remove from the heat and mix in the nuts, flour, candied fruit and chocolate; press the mixture into the cake tin, flatten with the back of a wet spoon and bake for 30 minutes

-          Cool in the tin for 5 minutes, then remove tin, leaving the rice paper on the panforte; cool on a wire and dust with icing sugar

-          Sahhan il-forn ghal 180C/Gas 4; idlek forma tal-kejk ta 20cm x 2.5cm u iksi l-qiegh u l-gnub bl-ostji

-          Dewweb ic-cikkulata fil-microwave, tlettin sekonda kull darba; idhan il-kannella, l-imsiemer tal-qronfol u l-bocci tal-bzar iswed sakemm isiru trab u hallathom mac-ckkulata u n-noce moscata

-          Poggi z-zokkor u l-ghasel go borma u hawwad filwaqt li thalli t-tahlita tiftah taghli bil-mod; halliha taghli ghal 30 sekonda; nehhi minn fuq in-nar u hallat maghha l-lewz kollu, d-dqiq, il-konfettura u c-cikkulata; ghafas gol-landa tal-kejk u l-lixxa l-wicc b’mgharfa mxarrba; sajjar ghal 30 sekonda

-          Halliha tiksah ghal 5 minuti, nehhi minn gol-landa u halli l-ostja; halliha tiksah u roxx l-icing sugar fil-wicc
