PUMPKIN, SPINACH AND GOATS’ CHEESE FRITTATA

 

Serves 6

Ingredients

750g pumpkin, peeled and cut into 1.5cm cubes

3 tbsp olive oil

200g frozen spinach

6 large eggs

200ml double cream

25g grated Parmesan

¼ tsp dried chilli flakes

1 garlic clove, crushed

150g soft rindless goats’ cheese

 

Method

-          Preheat the oven to 220C/Gas 7; put the pumpkin in a roasting dish, toss with 2 tablespoons oil and seasoning and roast for 20-25 minutes until just tender

-           Defrost the spinach and squeeze out all the extra water

-          When the pumpkin is ready, remove from the oven and set aside; reduce the oven to 200C/Gas6; put the eggs, cream, parmesan and chilli flakes in a bowl, season with pepper and a little salt to taste and whisk to combine

-          Heat the remaining oil in a frying pan; add the crushed garlic and stir over the heat for 30 seconds, add the spinach and cook, stirring occasionally for 3-4 minutes; tip into the bowl with the egg mixture and stir in the pumpkin

-          Pour the egg mixture into an ovenproof dish and dot over the goats’ cheese; add a little more pepper and chilli flakes and place in the oven and bake for 20-25 minutes until puffed and golden; cover with foil if the top is over-browning; slice into wedges and serve

-          Sahhan il-forn ghal 220C/Gas7; poggi l-qargha hamra fuq turtiera u hallat ma’2 imgharef zejt, bzar u melh; ahmi ghal 20-25 minuta sakemm tibda tirtab

-          Id-dfrostja l-ispinaci u ghasar l-ilma kollu zejjed minnha

-          Meta l-qargha hamra tkun lesta, ohrogha mill-forn u erfaghha fil-genb; naqqas it-temperatura tal-forn ghal 200C/Gas6; poggi l-bajd, il-krema, il-parmiggjan u c-chilli flakes fi skutella; zid il-bzar u ftit melh skont il-gosti u habbat kollox flimkien

-          Sahhan il-kumplament taz-zejt f’tagen; itfa’ t-tewm u sajjar ghal 30 sekonda; zid l-ispinaci u sajjar ghal 3-4 minti; hawwad minn hin ghal iehor; zid l-ispinaci mat-tahlita tal-bajd u zid il-qargha hamra

-          Ferra’ t-tahlita kollha go dixx tal-forn u ferrex il-gobon tal-moghoz; zid ftit aktar bzar u chilli flakes u ahmi ghal 20-25 minuta sakemm tintefah u tiehu kulur dehbi; ghatti -l-wicc fil-foil jekk jibda jiehu wisq kulur; aqta’ f’porzjoni u servi
